The fourth batch of this yeast is our dark mild, using my favourite recipe for this style.  OG is 1.039 using quite a few dark malts, including crystal, brown malt, and chocolate.  Colour is about 19 SRM, so almost black but not quite.  Hops are restrained at around 20 IBU.  Water treatment is simple for this style using this brewing liquor, with only salt added to the mash and a touch of gypsum in the sparge liquor.

This beer is probably the best one yet of the Olympia brews, just showing how important water profile is to making the difference between a good beer and a great one.  Wonderful malt character, good clarity.
